GRAM'S ZEPPOLES 
4 eggs
3 tbsp. sugar
2 c. flour
4 tsp. baking powder
2 pinches salt
2 c. Ricotta cheese
1/2 tsp. vanilla

Beat eggs. Add Ricotta and vanilla. Mix in gently remaining ingredients. Batter will be sticky. Heat 3-4 inches of corn oil in deep pot to 375 degrees. Drop dough by teaspoonful into corn oil. They will turn over by themselves when one side is done but should be watched. Drain on paper towels. Sprinkle with powdered sugar or cinnamon sugar.

This the recipe my Hungarian Gram, Elizabeth Redling, always made. It is simple to make and so yummy! She made it for her 2 great granddaughters often and passed it on to me (their mom). I now make it for my 2 grandsons. I shared this recipe in the St. Jude the Apostle, Hamburg, NJ parish cookbook in the early 90s. Imagine my surprise to find it uploaded here. Thanks to whomever shared and posted it!

The only additional comments I have are: Gram always mixed this by hand, but you can use your electric mixer; you can make the batter the night before and store it covered in the fridge till you fry them; and just this year, I put the batter in my waffle maker for a new twist on this fave family treat!

We also serve Gram's Zeppoles with brown sugar or strawberry jam. We put all the toppings in bowls and let everyone enjoy them plain or fancy! I hope you enjoy them as much as we do!
