SOFT GINGER COOKIES 
3 c. flour
1/4 tsp. salt
3/4 c. sugar
1 1/2 tsp. ginger
1 1/2 tsp. cinnamon
3/4 c. shortening
3/4 c. molasses
1 egg
1 1/2 tsp. baking soda
1/2 c. hot coffee

Add dry ingredients, molasses and egg. Dissolve soda in hot coffee. Add to mixture. Mix thoroughly. Drop by spoonfuls. Bake at 400 degrees about 10 minutes. Yields 2 1/2 dozen large cookies, 4 dozen medium cookies.
