EASY RAISIN BREAD 
1 c. raisins
1 tsp. baking soda
1 c. boiling water
1 1/2 c. flour
1/2 c. sugar
1/2 tsp. salt
1 egg, beaten
1 tbsp. salad oil

Combine raisins and baking soda in small bowl. Add boiling water. Cool 30 minutes. Mix flour, sugar and salt in medium bowl. Stir raisin mixture, egg and oil into flour mixture. Mix well.

Pour into a greased and floured 9x5x3 inch loaf pan. Bake at 350 degrees for 45 minutes or until golden brown and when tester inserted in center comes out clean. Cool 10 minutes in pan. Remove to wire rack.

Great raisin bread and easy. I used raisin bran cereal and did not boil the water, only baked for 30 minutes. It turned out great, moist and delicious. My daughters and husband like raisin bread a lot, so this is going to be a keeper. Thanks for sharing.

Sheesh! Who runs out of raisins? I only had about 1/3 cup in the pantry so I added a bunch of chopped walnuts to the batter. It's baking right now and I can't wait until it's out and cooled so we can each have a slice. What an easy recipe to throw together!
