APPLESAUCE RAISIN BREAD 
2 1/2 c. flour
1 1/4 c. sugar
1 tbsp. baking powder
1 tsp. salt
1 1/2 tsp. baking soda
1 tsp. cinnamon
1 c. raisins
1 c. chopped walnuts (optional)
2 eggs
1 c. applesauce
1/2 c. oil

Place all dry ingredients into a large bowl. Stir in raisins and nuts. Combine eggs, applesauce and oil. Add to the dry ingredients and stir until just blended. Grease mini loaf pans. Place waxed paper into bottom of each pan (cut waxed paper to same size and shape of bottom of pans). Divide batter into mini loaf pans and bake in preheated oven, 350 degrees about 50 minutes. Cool on wire rack. Makes 8 mini loaves.
