POLLO CON TOCINO 
1 lg. stewing hen
Chili powder
Minced garlic
Butter
2 l. onions, sliced
2 cloves garlic, minced
3 - 4 bacon slices
Cornstarch
1 med. green pepper, chopped
1 c. tomato puree
3 tbsp. chopped parsley
1 1/2 tbsp. sugar
1 tsp. salt
2 tsp. chili powder
1/2 c. Madeira wine

Spread chili powder and garlic on bacon. Roll slices tightly and put into cavity of hen. Sew cavity closed. If possible, place hen breast down in large crock pot. In skillet fry onions, garlic cloves, green pepper and butter until soft. Add remaining ingredients and cook up to a boil. If using a crock pot, pour mixture over top of chicken and cook on low 8 - 10 hours. If using a large pan, pour mixture plus water to cover 3/4 of hen. When cooked, remove bones. Excellent poured over a ring of rice. When rice is cooked and warm, lots of jack cheese can be added according to desire and a ring formed to accept the hen mixture.
