8 oz. cream cheese, softened
3 tsp. vanilla
4 sq. semi-sweet chocolate
2 sticks butter
1 c. broken walnuts or pecans
1 3/4 c. sugar
1 1/2 c. flour
4 lg. eggs
1/2 tsp. salt
1 tsp. vanilla
1/2 c. chocolate chips

Melt chocolate and butter in a sauce pan; add nuts. In mixing bowl, combine sugar, flour and unbeaten eggs. Blend, but "do not beat". Stir in vanilla gently. Place in paper baking cups in muffin tins - fill 1/2 full. Beat together cream cheese and vanilla for filling; drop 1 teaspoon cream cheese mixture into each cupcake. Fill cupcake completely, now, with chocolate batter. Top each cupcake with four chocolate chip pieces. Bake at 325 degrees for 35 minutes. Cool in muffin tins for 10 minutes. These cupcakes will look as though they aren't completely baked. They will crack open and look a little cooked. BUT DON'T OVERBAKE! Makes 14 to 16 cupcakes.
