|PLUM PUDDING CAKE|
1 cup flour
3/4 cup sugar
2 tsp. baking powder
1/4 tsp. salt
1 tsp. ground cinnamon
1 cup brown sugar (packed)
4 tbsp. vegetable oil
1/2 cup milk (do not use low fat)
2 1/2 cups sliced Italian plums
1 cup boiling water
Preheat oven to 350°F. Grease an 8-inch square baking dish.
In a mixing bowl, mix together flour, sugar, baking powder, salt and cinnamon. Stir in brown sugar.
Combine oil and milk. Stir into the flour mixture.
Pour into pan or casserole, arrange pitted and sliced plums on top.
Pour boiling water evenly over the entire batter. Do not mix!
Bake for about 60-70 minutes or until a toothpick inserted in center comes out clean.
