QUICK'N EASY SUGAR COOKIES 
2 eggs
2/3 c. vegetable oil
2 tsp. vanilla
3/4 c. granulated sugar
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt

In a medium-size mixing bowl, beat eggs with a fork until the whites and yolks are well blended. Add the vegetable oil and vanilla, stirring until blended with the eggs. Blend in the sugar.

Sift together the flour, baking powder and salt. Add these dry ingredients, a small portion at a time, to the above mixture, mixing until all ingredients are moist and batter is smooth.

Drop batter by the teaspoon, about 2 inches apart, onto an ungreased cookie sheet.

Press each with the bottom of a glass that has been oiled and dipped in sugar. You can use a plain glass, or look for some kinds of stemware that have a star pattern on the bottom for a different design.

Makes about three dozen 3-inch cookies.

Bake in a preheated 400°F oven for approximately 8 to 10 minutes.

Allow cookies to cool on the cookie sheet for 2 or 3 minutes before removing to a wire rack to complete cooling.

The cookies are in the oven now after 10 minutes of prep! The batter was delicious and I hope the cookies will be too:). Made 2 and a half batches for me. About 30 cookies. The batter is also really fun to play with if you stir it instead of beating it!

Very simple! If you're out of butter, these are a worthy substitute! You don't even need to flatten the cookies - you can just drop them, throw some sprinkles on and cook. They turn out well - very light and cakey!

Best sugar cookies I have ever made. They were so simple. I added a little more flour. Then I rolled them into balls, dipped them in sugar and flattened them. 9 minutes in the oven on 400°F and they were perfect. Made 34 cookies.
