8 oz. can crab meat
8 oz. (hard) cream cheese
2 tsp. horseradish
1 1/2 tbsp. chives (finely chopped)
1 1/2 tbsp. green onion (finely chopped)
1/2 tsp. fresh parsley
1 tsp. finely chopped pimento (optional for color)
8-10 Ritz crackers, crushed

Place cream cheese out at room temperature for 1/2 hour to soften. Drain crab meat and place in bowl. Mix crab meat into cream cheese. Add horseradish, chopped olives, green onion and parsley. Mix until creamy. Refrigerate 30 minutes or until firm. Remove mixture from bowl, form a ball by using your hands.

Next, roll ball in crushed Ritz crackers until ball is totally covered. Put back in refrigerator. Before serving, pop into microwave 1 - 1 1/2 minutes on reheat cycle to warm mixture slightly. Place on plate, garnish with Ritz crackers and vegetables.
