GREAT GRANDMA'S SHEEP-WAGON
CARROT CAKE
 
1 1/3 c. sugar
1 1/3 c. water
1 c. raisins or chopped candied fruits
1 tbsp. butter
2 lg. finely grated carrots
1 tsp. cinnamon
1 tsp. cloves
1 tsp. nutmeg

Mix these ingredients and simmer over low heat for 5 minutes. Cover and let rest for 12 hours. Then add: 2 1/2 c. sifted flour 1/2 tsp. salt 1 tsp. baking soda 2 tsp. baking powder

Mix well, then pour in 2 large loaf pans or 1 tube pan. Bake at 275 degrees for 2 hours. Cool, and wrap in foil.
