MINI BLINIS 
3 loaves Pepperidge Farm Bread (1 lb. size)
2 (8 oz.) pkg. cream cheese, softened
1/2 c. sugar
2 egg yolks
Melted butter (1 lb.)
Sugar and cinnamon, mixed

Cut crusts off bread slices and roll each slice as flat as you can get it. Mix cream cheese, sugar, and egg yolks. Spread approximately 1 teaspoon on each slice of bread and roll up from top to bottom. Dip each roll in melted butter and roll in cinnamon and sugar mixture. Freeze on waxed paper and keep in plastic bag in the freezer until ready to use.

Bake at 400 degrees for about 10 minutes or may be microwaved about 1 to 2 minutes. Use as dessert, appetizers, breakfasts. Can be served with fresh fruit, ice cream, sour cream. Can cut them in half before baking. Makes about 60 blinis; 120 cut in half.
