SAUSAGE AU GRATIN CASSEROLE 
1 lb. smoked sausage, sliced round
1 med. onion, chopped
1 (5.5 oz.) box au gratin potato mix
2 tbsp. cooking oil
2 1/2 c. water
1/4 tsp. pepper
3 med. carrots, cut julienne strips
1 head broccoli, broken in pieces
1 (4 or 6 oz.) pkg. shredded cheddar cheese

In large electric skillet heat cooking oil; add onion and sausage. Cook and stir occasionally until brown. Add potato and sauce mix, also pepper. Pour water on top and stir until mixed. Cover and simmer until potatoes are tender, 5 to 10 minutes. Steam broccoli and carrots slightly, then add to potato and sausage mixture. Cook few more minutes, until vegetables are tender. Turn off heat and sprinkle cheese on top. Cover until cheese melts.
