PEDRO'S DELIGHT 
1 lb. ground beef
1 lg. onion, chopped
3 1/2 c. canned tomatoes
2 (4 oz.) cans green chilies
1 lb. Monterey Jack cheese, grated
1 (10 oz.) bag tortilla chips
1 c. whipping cream with 1 tbsp. vinegar added
Whole tortilla chips
Sliced tomatoes

Saute onion and ground beef together. Add tomatoes and green chilies. Layer tortilla chips, meat mixture and cheese. Pour soured cream over top. Bake, uncovered at 350 degrees for 30 minutes. If prepared ahead and refrigerated, lengthen baking time 15 minutes. Garnish with whole tortilla chips and sliced tomatoes. 6 servings. Can use regular sour cream.
