“GARLIC MASHED POTATOES” IS IN:

GARLIC MASHED POTATOES 
2 lb. peeled and diced potatoes
1/2 to 1 head garlic cloves, peeled and mashed
6 tbsp. butter
1/2 to 3/4 cup heavy cream, half & half or milk

Cover potatoes with water sufficient to cover in a heavy-bottomed pan. Cover and bring to a boil. Reduce heat slightly and simmer until potatoes are fork-tender.

Drain potatoes and set aside. Return empty pan to heat and add butter, leaving until butter melts. In a separate pan, bring cream or milk to boil (do not allow to curdle; remove from heat immediately when it starts to boil).

Mash the potatoes, beating in the butter and half & half, cream or milk, mashed garlic, and salt and pepper, until potatoes are smooth and fluffy.

NOTE: For milder garlic flavor, parboil garlic along with potatoes, then mash with potatoes.

I add sour cream instead of the milk/cream/or half and half!!! Also to add a little zing, I add two tablespoons of Tony's when boiling potatoes!!! Geaux Saints!!!

Tony's is Tony Chachere's cajun seasoning salt. It is wonderful. It goes well with everything.

Barbara: Tony's is short for Tony Chachere's Creole Seasoning. We use it on just about everything here in the south. If you can't buy it in your local grocer, I know you can order it online at www.tonychacheres.com

Tony's can also be found on the spice isle at Walmart. It is in a green can with a red top. They also have one with lower salt content. It has a good bit of salt added so check it before you add more salt or it your recipes may have too much salt. It is a good seasoning that you can add to most foods. I use it a lot for fried chicken, and sometimes sprinkle it on home fries as soon as I take them out of the oil.

Hi Eva,

A head of garlic is an entire head of garlic, not a single clove (there are numerous individual cloves of garlic in a head of garlic). The recipe says that you can use from 1/2 head of garlic to 1 whole head.

Consider these possibilities: 1. Chop and saute the garlic in olive oil before adding to the potatoes and then mashing. 2. Put the mashed potatoes in a buttered, oven-proof dish, and broil for a few minutes, until brown peaks form. Serve very hot.

If you boil the potatoes with the garlic the flavor of garlic cooks in the potatoes. The garlic is soft and can be mashed with the potatoes.

For an added touch, separate garlic cloves but leave peel on and roast them in a metal cup cake baking pan with 1 tsp of olive oil mixed in for around 10 mins on 400°F.

This recipe is really great and simple, and I have prepared garlic mashed potatoes a few times since discovering it! I've made a few of my own changes, that my boyfriend and I agree really takes it to the next level:

For a little sweetness and depth of flavor, try using half white potatoes and half sweet potatoes - this may sound strange to some, but it's ooooh so delicious, trust me!
To knock down the sharpness of the garlic flavor without losing it too much, chop each clove into 3 or 4 pieces and saute in a little olive oil before adding to potatoes. Try adding some thyme as well!
Mix in a few pinches of thyme and dill to your mashed potatoes once they're done. Yum.
