RECIPE COLLECTION
“CREAMED SPINACH” IS IN:

CREAMED SPINACH 
3 tbsp. butter
4 tbsp. all-purpose flour
1 1/4 tsp. salt
1 cup whole milk
1/2 cup dairy sour cream (can be low-fat)
2 tbsp. butter
2 tbsp. onion, minced
1/4 cup water
20 oz. frozen spinach, chopped
1/4 cup Parmesan cheese

Melt 3 tablespoons butter in a small saucepan on medium-low heat. Stir in flour and salt until creamed together. Stir in milk a little at a time. Increase the heat to Medium. Constantly stir with a whisk until mixture is thick and smooth.

Remove from heat and set aside.

Melt 2 tablespoons butter in a 2-quart saucepan over medium heat, add onions and cook until transparent. Add spinach and water to pan, lower the heat and cover. Stir several times until spinach is almost completely cooked.

When spinach is almost done, add white sauce, dairy sour cream and Parmesan cheese. Stir well and simmer until completely blended.

Serves 6.

I had never though about making spinach that way; however, it was delicious. I even added a can of sliced mushrooms & sliced almonds. To toast the almonds, I sprinkled them on top and put it in the oven for a few minutes. Next time I make it I am going to leave off the salt only because of medical conditions we have. This recipe did not have a salty taste...was perfect. The next day, we heated it up in the microwave and put it on specialty(bread)toast. Then sprinkled shredded sharp cheese on it. Was incredibly delicious.

love the recipe..I alter it little..double the parmesean..added pepper to taste and added 1/2 to 3/4 of minced garlic..while saute onion..1/8 of dill..it was great..original still really good.

hey Kathy,

...just a note to say "thank you" for your recipe. I LOVE creamed spinach, but have only eaten it from the chicken place from "Boston." This recipe, according to my friends, was better than theirs and I agree!! I made it just as you specified with one exception, I used cream cheese instead of sour cream and added a bit of pepper--it was awsome!
