GREEN & WHITE CHICKEN PINWHEELS 
4 oz. chicken breast, boned, skinned & pounded to 1/2 original thickness
1 c. cooked spinach, well drained & chopped
2 tsp. lemon juice
Dash of each onion powder, allspice & cinnamon
1/2 tsp. dried mint
Pepper to taste
2 tsp. lemon juice & paprika to coat the chicken before baking

Mix the spinach, 2 teaspoons lemon juice, onion powder, allspice, cinnamon, mint and pepper. Spread mixture over entire surface of the pounded chicken breast. Roll "jelly roll" fashion. Secure with toothpick. Sprinkle entire surface of chicken roll with lemon juice and paprika. Wrap in foil tightly and bake in preheated 350 degree oven for 30 minutes. Serve cold. At serving time, slice chicken into pinwheels and arrange attractively on plate. May be served hot, but doesn't slice as attractively.
