CUBED STEAKS WITH CAPER SAUCE 
4 beef cube steaks (about 1 lb.)
1 med. onion, thinly sliced
1/3 c. water
1 tbsp. capers
1 tbsp. prepared mustard
Parsley sprigs for garnish

About 20 minutes before serving, in 12-inch skillet over medium heat, in 2 tablespoons hot butter, cook 2 beef cubed steaks at a time until browned on both sides and tender; about 5 minutes. Remove steaks to platter; keep warm. In drippings remaining in skillet over medium heat, melt 2 tablespoons of butter, add onion; cook until tender, stirring occasionally. Stir in water, capers and mustard. Cook until mixture boils and thickens slightly, stirring constantly. Pour caper sauce over steaks. Garnish with parsley sprigs. Makes 4 servings.

This recipe was remarkably tasty and easy to make! The only thing I did was add some corn starch to the gravy to add some thickness to it. But other than that, as prepared, this was tasty and will find its way to my regularly prepared menu.

This is a hamburger with mustard and onions! I was expecting a little more sophistication when I tried it, and after sautéing the onions I added the capers and water and the capers smelled wonderful. Really promising! But then the mustard goes in and overwhelms the other flavors. Too bad! Pitching this one in the circular file.

Made this tonight for my husband. tried it to be "fancy" instead of going out for dinner. He really liked it. Although he said the mustard was a bit strong. I had used spicy ground mustard instead of regular yellow mustard. I would make this again.
