1 head cauliflower
Italian seasoned bread crumbs, about 1 c.
1/2 c. grated Parmesan cheese
Salt and pepper
1/2 tsp. garlic powder
1-2 eggs, depending on size of cauliflower
Boil cauliflower until tender; drain. Mash in large bowl. Add bread crumbs, cheese, eggs and seasoning. Mix well. Heat olive oil in heavy skillet. Shape cauliflower mixture into small patties. Drop into heated oil and cook until slightly brown. Serve hot as a vegetable or cold as an appetizer.
