8 half chicken breasts, skinned and boned
1/4 tsp. salt
1/4 tsp. white pepper
2 eggs, beaten
1 c. milk
4 slices cooked ham (1 oz.), cut in half
4 slices Swiss cheese (1 oz.), cut in half
1/3 c. flour
1 1/3 c. dry bread crumbs

Flatten chicken to 1/4 inch using mallet or rolling pin. Sprinkle with salt and pepper. Combine eggs and milk. Brush both sides of chicken. Place a piece of ham and a piece of cheese in center of each chicken piece. Brush top of cheese with milk mixture. Fold ends of chicken over ham and cheese and roll up beginning on long edge. Secure with pick. Dredge in flour. Dip in remaining milk mixture and coat with bread crumbs. Cover and chill for 1 hour.

Can pan fry in butter or place in greased cake pan and bake at 350 degrees for 1 hour. Serve with sauce, if desired.

MUSHROOM SAUCE (optional) :

1 (10 3/4 oz.) can mushroom soup
8 oz. sour cream
4 oz. mushrooms
1/3 c. sherry

Combine all ingredients in saucepan over medium heat until hot.
