HORSERADISH SAUCE - LOW
CHOLESTEROL
 
1 tbsp. butter
4 tsp. flour
2 tbsp. horseradish, drained
1 c. fish stock or canned clam juice

Melt the butter, blend in the flour and cook briefly. Add horseradish and fish stock. Cook, stirring until thick. Serve over poached fish.
