1/2 c. + 1 tbsp. butter
1 3/4 c. all-purpose flour
3 eggs
3 to 5 tbsp. half and half
3 to 4 medium onions
4 bacon slices, diced
generous 1/2 c. whipping cream
ground pepper

Preheat oven to 400°F. Lightly grease an 11-inch quiche pan; set aside.

Using pastry fork, work butter into flour. Stir 1 egg, half and half and salt in to make dough. Let stand in a cool place a few minutes.

Now, thinly slice onions. Fry bacon until brown. Add onions and sauté 2 to 3 minutes. Drain fat. Next, in a medium bowl, beat together whipping cream, 2 eggs, salt and pepper.

On a lightly floured surface, roll out pastry. Line greased pan with pastry and prick surface with fork. Spread cooked bacon and onions over pastry. Pour in cream mixture.

Cover with foil.

Bake 20 minutes. Cut in squares. Serve warm with favorite beverage.
