BEAN FRITTERS (AKKRA FUNFUN) 
1 1/2 c. dried white beans or 3 c. canned beans, drained and rinsed
1/4 c. water
1 tsp. salt
1/2 c. all-purpose flour
2 tbsp. finely chopped onion
Ground cayenne pepper to taste
1 c. peanut oil

Rinse, soak and cook dried beans according to package directions, and drain. In blender or container, combine water and salt if desired and add beans. Blend on low speed until dark, and thick (add more water if necessary). Add flour, onion and pepper, mix well, in deep heavy skillet or deep fryer. Heat oil to a temperature between 350 and 375 degrees. Make rounded tablespoons of mixture and drop into hot oil. Fry until golden brown, add 3 minutes on each side. As cooked, transfer to paper towels to drain. Serve hot.
