1 lb. ground beef
1/4 c. chopped onion
1 tsp. salt
1 c. sour cream
1/4 c. chopped parsley (fresh)
8 oz. medium noodles, cooked and drained
1 tbsp. butter
2 (8 oz.) cans tomato sauce
1/4 tsp. pepper
1 c. cottage cheese
1 c. sliced, cooked carrots
1 c. shredded Cheddar cheese

Brown beef in melted butter. When meat begins to turn color, add onion. Saute until meat is well browned. Stir in tomato sauce, salt, and pepper. Simmer, uncovered, for 5 minutes. Combine sour cream, cottage cheese, parsley, and carrots. Add to cooked noodles. Mix well. Alternate layers of the meat mixture and noodle mixture in a greased 3 quart casserole, beginning and ending with noodles. Top with shredded cheese. Bake at 350 degrees for 30 minutes. Serves 6-8.
