1 pound lean ground beef
1/4 cup chopped onion
1/2 cup instant white rice
1/2 cup breadcrumbs
1/2 cup tomato juice
1 small can tomato paste
4 large tomatoes, cubed
1/2 teaspoon garlic powder
1/2 teaspoon ground pepper
1/2 cup Parmasan or Romano cheese
In a large bowl, break apart raw meat. Add rice and onion then mix thoroughly with hands. Add breadcrumbs, spices, and cheese and mix well again. Roll meat into 1-inch balls. Cook on low to medium high heat until browned.
When browned, add tomatoes paste, juice and cubed tomatoes and mix well. Reduce heat and simmer for 5 minutes. Serve with mashed potatoes and vegetables or can be spooned over cooked pasta.
