SQUASH PUDDING | |
This tastes just like corn pudding and will fool any squash-hater! 4-5 yellow squash, cooked, drained and mashed 1/4 cup (1/2 stick) butter 3 tbsp. all-purpose flour 1 1/2 cups sugar 2 eggs, beaten 1/4 cup milk 1 1/2 to 2 tbsp. vanilla Mix all ingredients well (I put mine in the food processor). Pour into a lightly greased casserole and bake, uncovered, at 375°F for approximately 30 to 40 minutes until almost done. Stir twice during this time. Turn oven up to 450°F until nicely browned. |
