REFRIGERATOR BRAN MUFFINS 
8 c. wheat bran flakes cereal
5 c. all-purpose flour
1 c. sugar
1 tbsp. baking soda
2 tsp. salt
4 eggs, beaten
1 qt. buttermilk
1/2 c. vegetable oil
Vegetable cooking spray

Combine cereal, flour, sugar, soda and salt in a very large bowl; make a well in center of mixture. Add eggs, buttermilk and oil; stir just until moistened. Cover tightly and store in refrigerator until ready to bake. (Batter can be kept in refrigerator for up to 3 weeks.)

When ready to bake, coat muffin pans with cooking spray. Spoon 3 tablespoons batter into each muffin cup. Bake at 400 degrees for 12 to 15 minutes or until lightly browned. Yield: 45 muffins (about 116 calories each).

I have made these for years, easy hot breakfast before work. Kids love them. I use Raisin Nut Bran because I like the raisins and nuts, also you can sub 2 cups whole wheat flour for white, I always use unbleached for all purpose flour. Also, you can sub 1/2 c. applesauce for 1/4 cup of the oil, makes them a little heavier, but still really moist and good.
