FRITO QUEJO (FRIED CHEESE) 
1 package of small Azumaya squares
1/2 cup fresh chopped parsley
1/2 cup chopped linguica
finely shredded or grated blue cheese (Parmesan or ricotta are acceptable)
1 tablespoon thyme, minced
one saucepan full of oil for frying

Fill one square at a time with cheese, linguica, parsley, and thyme. Do not fill so much that it can't be closed. Fold one corner diagonally towards the other corner, then press the sides, pinching together to seal.

When closed, take the two folded sides and draw back to pinch together.

Fry in hot vegetable oil until golden brown.

Cook's Note: Azumaya squares are a pasta like similar to wonton or egg roll wraps.
