8 med. sweet potatoes
1/3 c. packed brown sugar
1/4 c. butter
1/2 tsp. salt
3/4 c. tiny marshmallows

Oven at 375 degrees. Prepare and cook whole sweet potatoes in water just until tender. Drain, peel, and cut into 1/2-inch-thick slices. In a 1 1/2-quart casserole layer half each of the potatoes, brown sugar, butter and salt. Repeat layers. Bake, uncovered, in a 375 degree oven for 30 to 40 minutes or until glazed. Sprinkle marshmallows over top. Bake about 5 minutes longer or until lightly browned. Serves 6.

SKILLET CANDIED SWEET POTATOES: Use ingredients for Oven Candied Sweet Potatoes as above. Cook the potatoes. Melt butter in a 12-inch skillet. Stir in brown sugar, 1/4 cup water, and salt. Add cooked, sliced potatoes. Cook, uncovered, over medium heat 10 to 15 minutes or until glazed, basting and turning gently 2 or 3 times. Omit the marshmallows.
