CHOCOLATE CHEESECAKE MUFFINS 
3 oz. pkg. cream cheese
2 tbsp. granulated sugar
1 c. all purpose flour
1/2 c. sugar
3 tbsp. cocoa
10x sugar
2 tsp. baking powder
1/2 tsp. salt
1 beaten egg
3/4 c. milk
1/3 c. cooking oil

In small bowl beat cream cheese and 2 tablespoons sugar until light and fluffy. Set aside. In large bowl, stir together flour, 1/2 cup sugar, cocoa, baking powder and salt. Make a well in center of dry ingredients. Combine milk, egg and oil. Add all at once to dry ingredients, stirring until just moistened. (Batter should be lumpy.) Spoon about 2 tablespoons of chocolate batter into greased muffin tin. Drop 1 teaspoons of cream cheese on top, then more chocolate batter. Bake at 375 degrees for 20 minutes. Dust with powdered sugar if desired.
