PASTA WITH BLUE CHEESE SAUCE 
4 c. water
1 c. ziti or corkscrew macaroni
3 c. loose pack frozen mixed broccoli, carrots and cauliflower
2 tbsp. flour
1/8 tsp. salt
1/8 tsp. pepper
1 c. milk
1/2 c. crumbled blue cheese (2 oz.)
1/3 c. sour cream
Blue cheese, optional

In large pan boil water, add pasta, return to boil, cook 5 minutes. Add vegetables. Return to boil cook uncovered 5 to 7 minutes more or until tender. Drain, return pasta and vegetables to pan. Cover to keep warm. In small pan melt butter, stir in flour, salt and pepper, add milk. Cook and stir until bubbly; cook and stir 1 minute more. Remove from heat, add 1/2 cup cheese and sour cream, return to heat, cook and stir to heat through, but do not boil. Add to macaroni mixture; toss to coat. If desired, top each serving with additional cheese. Serves 6.
