SQUASH CASSEROLE 
2 lbs. squash, thinly sliced
2 med. onions, chopped
1 box Stove Top stuffing chicken flavored (do not follow directions on box)
1/2 c. butter, melted
1 c. grated carrots
1 c. sour cream
1 can cream of chicken soup
Salt and pepper to taste

Simmer squash and onion in 1 cup water for 5 minutes after it boils. In small bowl, mix crumbs and melted butter. Reserve 1/2 cup crumbs for top.

In large bowl, mix squash, carrots, sour cream and soup. Add crumbs and mix. Put in 2-quart greased casserole and bake at 350 degrees for 40 minutes.
