ZUCCHINI BREAD 
1 c. sugar
1 c. brown sugar
3 eggs, beaten
1 c. Crisco oil
2 c. zucchini, grated
3 tsp. vanilla
3 c. flour (don't sift)
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon

Cream sugars, eggs, oil, zucchini, and vanilla together. Add rest of ingredients. For muffins, grate zucchini finely. Bake at 350 degrees for 30 minutes or until they tests done. For bread, grate zucchini coarsely. Bake at 350 degrees for 1 hour.
