SPECIAL K COOKIES 
1 c. sifted flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. butter
2/3 c. sugar
1 tsp. vanilla
1 egg
1 c. Kellogg's Special K

Bake at 375 degrees for 10 minutes on ungreased cookie sheet.

Makes 40 cookies.

I've been baking these cookies since I was a little girl. All my ingredients are the same, however use baking soda, not baking powder for these delicious cookies. I also add 1 and a 1/2 cups of butterscotch chips to the batter. All my friends love it when I bake these sweet cookies. Has anyone tried it with the baking powder measurement instead?

I make the same recipe with baking soda rather than baking powder. Also, an old family recipe from my mother. The only variation is that I drop teaspoons of dough into a bowl of Special before I place the cookies on an ungreased baking sheet.

I made these special k cookies using baking powder and they were fine. I use to make them years ago and lost the written recipe. I looked it up online and bingo it was here.
