ZUCCHINI 
1 lb. zucchini
1 1/2 tsp. grated onion
1 1/2 c. cracker crumbs
1/4 c. melted butter
1 egg, beaten
1/2 tsp. salt
1/4 tsp. pepper, seasoned if wanted
1/2 c. cheddar cheese, grated

Mix butter and cracker crumbs (reserve 1/2 cup for top). Grate unpeeled zucchini and mix with onion, remaining crumbs, egg, salt, pepper and cheese and top with 1/2 cup crumbs. Bake at 325 degrees for 1 hour.
