BLUEBERRY MUFFINS | |
1 1/2 c. self rising flour 1/2 c. sugar 1 c. fresh blueberries 1 egg 1/2 c. oil 1/2 c. milk 1 c. XXXX powdered sugar Bottled lemon juice Mix together the flour, sugar and blueberries. In a separate bowl, combine the egg, oil and milk, and whip it with a fork. Fold the flour mixture into the liquid. Put in muffin tins lined with paper cups. Bake at 425 degrees about 15 minutes. Make a glaze for the muffins with the powdered sugar and lemon juice. Add juice to right consistency. Spoon on hot muffins. Makes about 1 1/2 dozen. |
