VEGETABLE PIE 
1 lb. sliced fresh mushrooms
1 onion, sliced
2 zucchini or yellow squash, sliced
1 green pepper, sliced
3 - 4 tbsp. butter
1 tsp. salt
1/4 tsp. pepper
Dash garlic salt
1 tomato, sliced
1 (10 inch) pie shell, unbaked
1 c. mayonnaise
1 c. grated mozzarella cheese

Saute vegetables in butter until crisp, but not sift. Drain well and add seasonings. Place tomato sliced in bottom of pie shell; add vegetables. Pour mayonnaise - cheese mixture over vegetables. Bake uncovered at 350 degrees for 1 hour. Serves 6 Enjoy!
