CHESTNUT RIDGE VEGETABLE MIX 
2 med. onions, sliced
2 sm. zucchini, sliced
3 tomatoes, peeled & cut up
1 eggplant, peeled & cut in cubes
1 green pepper, cut in strips
1/4 c. salad oil
2 tsp. salt
1/2 tsp. basil
1/8 tsp. pepper

Cook onions in oil in bottom of deep frying pan. Add remaining ingredients. Cover and cook 15 minutes. Uncover and continue cooking until vegetables are tender and juice thickened. Stir occasionally.
