Gomme is a traditional Scandinavian dark brown cheese-like delicacy that can be used as a spread on pancakes, waffles or crackers, etc. 2 gallons 100% whole milk 1/2 gallon sour milk or buttermilk 4 eggs or 8 yolks 1/2 cup dark Karo syrup 1/4 cup sugar In a heavy-bottomed stockpot, bring milk to a boil. Add sour milk or buttermilk and beaten eggs. Beat well together and let simmer until volume has reduced by half. Add Karo syrup and sugar. Simmer for 30 minutes, stirring continually to prevent scorching. Stir in a pinch of salt. Add thickener, if desired. (1 tablespoon dissolved gelatine or 1 tablespoon corn starch or 1/4 teaspoon xanthan gum). Good served with Lefse. |
