PAN COOKED SWEET POTATOES OR
YAMS
 
4 med. size sweet potato or yams
1 tsp. olive oil or butter
1/2 c. water
2 tbsp. reg. or brown sugar
Dash nutmeg
Dash cinnamon
Dash allspice
1 tsp. lemon juice
1/2 tsp. vanilla extract

Peel potatoes or yams. Slice and layer with above ingredients. Cover frying pan and simmer on medium heat. Approximate cooking time 15 to 20 minutes. 4 servings.

This is really good. If you want to "shortcut" and make fast & plain... when sweet potato is cooked - peel - then mash. Put butter on top - until melted... then drizzle your favorite "pancake syrup" over this - lightly. Is like "candied sweet potatoes"....

Ran across this recipe recently when I had run out of aluminum foil and couldn't bake my yam. I did modify the recipe slightly adding honey and cayenne pepper and leaving out the brown sugar, nutmeg, cinnamon, and allspice; was very satisfied with the end result and very simple to cook.

I'm not certain, but if you change all of the primary ingredients that way you prepared it as opposed to what the recipe called for, then can you really comment on the recipe?

For example. I omitted the sweet potatoes, butter, brown sugar, all of the spices, the lemon juice, and the vanilla extract. I then pan fried a ground beef patty with seasoning salt, put on a piece of American Cheese, Lettuce and Tomato, Heinz 57 then added some french fried potatoes. It was delicious.

This was delicious! I chopped up about two cups of kale and cooked it in the dish as well. Made sure all the water cooked down and made sure the edges of the potatoes got a little crispy because that's how I like it. Simply delicious! A light drizzle of local honey on top. So good. Now to turn my family onto it. Apparently this will only be my special treat.
