CHICKEN ALASKA 
4 boned chicken breasts, pounded
3 tbsp. clarified butter
1/4 tsp. salt
1/4 tsp. freshly ground pepper
4 slices any good white cheese
10/12 egg whites, room temperature
Freshly grated Parmesan cheese
Paprika

Gently grill or saute chicken with butter, salt, and pepper. Place on sizzle platters or oven-proof individual plates. Top with sliced cheese. Beat egg whites with pinch of salt until very firm. Pile whites onto chicken, layering and topping with Parmesan. Lightly sprinkle with paprika. Bake at 350 degrees for about 10 minutes or until firm and golden. Serves 4.
