KNEIFFEL SOUP 
4 to 5 med. potatoes, diced
1 med. onion, diced
2 tbsp. butter
4 to 5 tbsp. chicken base
1 c. cream
2 1/2 c. flour
3 eggs
1/2 tsp. salt

Bring 8 cups of water to a boil. Add potatoes. Brown onion in 2 tablespoons butter, add to boiling potatoes. In a separate bowl mix 2 1/2 cups flour, 3 eggs, 1/2 teaspoon salt and enough water to make a medium dough. When potatoes are done, add 5 more cups of water and 4 to 5 tablespoons chicken base (to taste). Bring to a boil again. Snip dough with scissors into boiling water. Boil 10 to 15 minutes. Turn off heat, add 1 cup cream and a little thickening if needed.
