2 lb. crayfish tails & fat
1 stick butter
1 c. finely chopped celery
1/2 c. finely chopped bell pepper
2 med. cloves garlic, minced
2 tsp. cornstarch
2 c. cold water
1 c. finely chopped onions
1/4 c. onion tops & parsley
Salt, black pepper & red pepper to taste
