CREAM OF COCONUT CAKE 
1 box yellow or white cake mix
3 eggs
3/4 c. oil
1 (8 oz.) carton sour cream
8 oz. can cream of coconut
1 tsp. vanilla or coconut extract
Coconut, as much as you like

Mix ingredients as listed. Pour into 3 layer pans and bake for 30 minutes, or until cake top springs back to touch. Bake in 350 degree oven. Prepare filling and put cake together with a layer of filling and a layer of coconut.

FILLING:

1 box powdered sugar, sifted
1 stick butter
1 (8 oz.) pkg. cream cheese, room temperature
1 tsp. vanilla

TIP: Make your own sour cream, less than half the calories of the real thing. Use the same as commercial sour cream. Only 18 calories per teaspoon:

3/4 c. sour cream
3/4 c. buttermilk
