LEMON SQUARES 
CRUST:

3/4 c. butter, softened
1/3 c. powdered sugar
1 1/2 c. flour

TOPPING:

3 eggs
3/4 c. sugar
3 tbsp. flour
1/3 c. lemon juice
1 tsp. lemon rind

Preheat oven to 350 degrees. Cream together softened butter and powdered sugar. Add flour and mix until creamy. Spread in a sheet cake pan, evenly. Bake 15-20 minutes OR until lightly golden. Mix topping ingredients together while crust is baking. Pour topping over hot crust and bake an additional 20-25 minutes. When cool, cut into squares and sprinkle with powdered sugar.
