Jiffy Corn Casserole

We use this recipe every year for Thanksgiving dinner, without the sugar. (The corn and muffin mix are sweet enough for us.) I double it for a group of about 14 folks. There is *never* even a spoonful left at the end of the evening!

I also leave out the sugar and add a small can of diced green chiles - it adds a really nice flavor and everyone loves it!

I agree, I never used the sugar and its flavor and taste is great. leave out the sugar and you'll enjoy it.
This dish goes well for the kids too, at first they dont seems to want it, but after the first bite they want more and will ask who made it. enjoy and have fun with it.

I have fixed it both ways for my family, and we prefer the recipe that includes the sugar. However, it is all a matter of preference. I suggest trying it with 1/8 cup sugar or even a little less.

I absolutely loved this recipe and we used the sugar and it was really good! I will make this my new addition to not only our holiday meals but as a part to the regular meals too.

Very, very delicious. Made it with the sugar but next time I will try without. I may have to try to use variations to make it Weight Watcher friendly. Had to make a double batch in a casserole pan and it fed 11 adults no problem.

I LOVE it with the sugar. My goodness, there is NEVER any left. Everyone loves this casserole. I double the ingredients for a large group. But I cut the sugar in half. It is SO delicious!

I have made this 2 ways one way was the full fat version with the butter and regular sour cream... The next time I made it with fat free sour cream and I can't believe it's not butter spray to make it more figure friendly I loved it both ways. There didn't seem to be much difference in the taste at all... I too left out the sugar in both.

Hi my name is Eileen, loved the recipe. I make it sooo many ways - bacon, sausage and bacon, jalapenos, green chilies, zucchinis. If you love corn bread you cant go wrong with this recipe! Don't forget the creamed corn - this makes it.

I made 2 of these for lunch at the annual church meeting. I left out the sugar and they were still plenty sweet. I cut up 3 jalapeno peppers and put them in one for the people who like HOT!!! Both were completely gone. Everyone loved them and asked for the recipe.

Leave out the sugar, but use a can of mexican corn instead of regular. It adds color to the dish.

Love this - we have made it for years (also without the added sugar.) Only difference is I use 1/3 cup canola oil instead of butter or margarine- a little less and better-for-you fat.

I don't add the sugar but I do add maple syrup. No measuring....just squirt some in. I have also made it with onions and japalenos without the syrup.

Just made this for Christmas dinner. No sugar. Added third cup chipped jalepenos, one tablespoon of chili flakes and it was awesome. The only problem they left me no leftovers. Hint make an extra one for yourself! Thanks for the recipe.

We love this recipe (no sugar, not because of calories but because it is just right without). I fry a pound of crumbled breakfast sausage and add it. A one dish meal.

I took out the sugar as well and replaced the sour cream with plain nonfat greek yogurt, family and friends loved it.

We love this! I omit the sugar, but sprinkle some pepper (to taste) before I bake.

If we've had some left over, the next day - I add another can of creamed corn, mix well and bake until it is heated thoroughly.

I freeze Olatha sweet corn every year and use this recipe. I'm also the one who is asked to bring it to all holiday pot luck. No sugar. But add some crumbled cooked bacon yum!

I've made this recipe for over ten years now. I've never used sugar either. I'll sometimes use shredded cheese in it or on top. The past few years I've made it with plain non fat yogurt instead of sour cream, and I use olive oil butter. Tastes just the same. :)

This is a favorite in my family, I don't add any sugar but I do put some green onion in it. It adds a nice subtle flavor and some color to the casserole!!
