“JIFFY CORN CASSEROLE” IS IN:

JIFFY CORN CASSEROLE 
1 can whole kernel corn with juice
1 can cream style corn
1 cup sour cream
1/4 cup sugar
2 eggs, beaten
1/2 cup (1 stick) melted butter
1 (8 oz.) box Jiffy corn muffin mix

Mix together, adding muffin mix last.

Bake in large casserole or 9x13-inch pan at 350°F for 50-60 minutes or until set. Let stand 5 minutes before serving.

I take this with me to all family get togethers.. Everyone loves it.. I ran out of sour cream one time and used french onion dip in it's place and it makes it takes even better..

I have a question, do you add the Jiffy muffin mix in dry or do you prepare it as it says on the box and pour the batter on top?

You add the Jiffy mix in dry. The egg, corn, sour cream, etc will be enough to moisten it. We love this recipe, but it's WAY too sweet! I only use about 2 Tbsp of sugar and that's plenty. Otherwise, it's a great change from the usual boring side dishes that I've grown tired of making.

Fabulous dish that I've made two years in a row. I too use the sugar but reduce it to about 1/4 cup or less, I just sprinkle it on. I'm definitely going to try it with mexicali corn or jalapenos next time and leave out the sugar.

Absolutely LOVE this dish! I make it every year for Thanksgiving, and always bring to potlucks. I leave out sugar, add only 1/4c. butter, and add 1 cup of shredded colby jack or cheddar cheese - 1 cup in the mixture, 1 cup sprinkled over the top before baking. (it just doesn't need the sugar whether you're going diet or not) Yum!
