MINI - QUICHES 
1 pkg. pie-made pie crust
4 lg. eggs
2/3 c. heavy cream
1/4 c. Parmesan cheese
1 tbsp. Dijon mustard (coarse)
1/4 tsp. salt
1/8 tsp. pepper

Preheat oven to 400 degrees. Press dough into tartlet pans (small cupcake). Bake until golden (approximately 10 minutes). Beat eggs, cream cheese and mustard; add salt and pepper. Spoon 1 to 2 tablespoons into each pastry. Bake until set (approximately 8 minutes). Makes 2 1/2 dozen.
