CHICKEN BROCCOLI RICE CASSEROLE 
2 to 3 c. cooked, deboned chicken
1 bag frozen broccoli
1 1/4 c. Minute Rice
1 lb. Velveeta
2 cans cream of mushroom soup
1 lg. can mushrooms
1 1/2 soup cans of water
1 can French fried onions

Mix chicken, broccoli, rice, soup, mushrooms and water together and place in a 9 x 13 inch pan. Cut Velveeta into 1 inch chunks and place on top of mixture. Sprinkle French fried onions on top of cheese. Cover and bake at 375 degrees for 45 minutes. Remove cover for last 5 minutes.
