2 lbs. fillets fresh halibut, cut into 2 1/2 to 2 inch chunks
Salt (optional)
Dry white wine
1 1/2 c. dry bread crumbs
1 c. sour cream
1/2 c. soft butter
1/2 c. onion, finely chopped
Paprika for garnish

Remove any white or dark skin attached to the halibut, then cut into chunks as indicated. Place the fish into a glass mixing bowl and salt lightly. Pour enough dry white wine into the bowl to just cover the chunks of fish. Place the bowl in the refrigerator and let chill for 2 hours. Drain the fish, discarding the wine and pat dry with paper toweling. Roll the fish in the bread crumbs, then place the crumbed fillets in a lightly buttered baking dish, in a single layer.

In a medium size mixing bowl, combine the sour cream, butter and chopped onion. Stir this mixture to blend well, then spread thickly on top of the fish. Spritz with paprika to color garnish. Bake in a preheated 450 degree oven for 15-20 minutes or until light and bubbly. Serves 4.
