3/4 c. whole wheat flour
3/4 c. unbleached white flour
1/2 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt (optional)
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
1 egg white
1 whole egg
3/8 c. (6 tbsp.) vegetable oil
1 1/4 c. packed, finely grated, unpeeled zucchini
1/2 c. nuts, chopped
1/3 c. raisins

In a large bowl combine the flours, sugar, baking powder, soda, salt, cinnamon, cloves and nutmeg. In a medium bowl mix together egg white, whole egg, oil, zucchini and vanilla. Add this mixture to the flour mixture, stirring to combine them well. Stir in nuts and raisins. Pour batter into greased 9 x 5 x 3 inch loaf pan. Bake in preheated 350 degree oven for 50 to 60 minutes or until pick inserted in center of bread comes out clean.
